Kajiken specializes in Abura Soba (油そば) — a Nagoya-style, soupless noodle dish also known as oil soba, mazemen, or brothless noodles.

The Kajiken Way

Base × Spice × Topping

Kajiken was born in Nagoya with one bold idea: Abura Soba, a soupless style of ramen you finish yourself. Every bowl starts with our homemade noodles and secret base, then comes to life when you add chili oil, vinegar, and toppings to match your mood.

Think of it as a simple formula — BASE × SPICE × TOPPING. This is the heart of Kajiken's "ENDLESS FUN": you customise the flavour, texture, and intensity in every bite.

Dish Guide

What is Abura Soba, and how is it different from Mazesoba or Ramen?

Abura Soba is a soupless noodle dish, sometimes described as dry ramen or oil soba. Traditional ramen comes with broth. Mazesoba is another mixed-noodle style, while Kajiken's signature dish focuses on Nagoya-style Abura Soba with sauce, toppings, and custom seasoning at the table.

Abura Soba

Kajiken's signature soupless noodles. Mix the sauce, vinegar, chili oil, and toppings together before eating.

Mazesoba

A Japanese mixed-noodle style with rich sauces and toppings. It sits close to Abura Soba but is not exactly the same dish.

Ramen

Traditional Japanese noodles served with broth. On Kajiken's menu, ramen is a different dish family from Abura Soba.
