What is Abura Soba, and how is it different from Mazesoba or Ramen?
Abura Soba is a soupless noodle dish, sometimes described as dry ramen or oil soba. Traditional ramen comes with broth. Mazesoba is another mixed-noodle style, while Kajiken's signature dish focuses on Nagoya-style Abura Soba with sauce, toppings, and custom seasoning at the table.

Kajiken's signature soupless noodles. Mix the sauce, vinegar, chili oil, and toppings together before eating.
Mazesoba
A Japanese mixed-noodle style with rich sauces and toppings. It sits close to Abura Soba but is not exactly the same dish.
Ramen
Traditional Japanese noodles served with broth. On Kajiken's menu, ramen is a different dish family from Abura Soba.
